Tropical Popsicle
The newest crown jewel of our collection at its price point. The Tropical Popsicle previously known by its scientific name M1, was first presented during Coffee Hub Thailand. And it was a smashing hit, everyone wanted to buy it, but we only brought a few kilos of roasted coffee.
This Rio Negro coffee is very unasumingly cofermented with deep flavors of passion fruit cooling down to orange. Those are the two fruits that we used during the fermentation. But during the four days we presented it, many people said it tasted like lychee, while other also noted some herbal notes like thyme or rosemary.
This coffee is a pink bourbon, a variety widely cultivated in Jhon Rodrigez's home region of Acevedo, Huila. He selected it because of its availability of course but also its capacity to bring out the best out of those tropical, passion fruity, citrusy notes that he cherishes so much.
I cannot emphasize enough how much he loves these notes. Almost all of his experiments involve some citrus lemon, bergamot, orange, mandarin. Using the juice or the whole skin, he loves playing around these aromas. And he settled on this profile and we are so happy he did.
